Nishi-Izu Shio Katsuobushi Udon
Collaboration of traditional local ingredients in Nishi-Izu, salted bonito and udon.
Nishi-Izu has a traditional preserved food called "salted bonito". Shio Katsuobushi Udon is a B-class gourmet dish where salted bonito is sprinkled on boiled udon noodles. It goes perfectly well with soy sauce broth, and it's also great with toppings such as green onions, seaweed, and sesame seeds!
