Iki and Tsushima are famous as the ancient Japanese states mentioned in the "Weizhi Woren Zhuan." The Goto Islands are made up of 130 islands floating in the sea of Nagasaki Prefecture. During the Edo period, they were the castle towns of the Goto clan and also served as a settlement for hidden Christians, leaving behind many historical sites. Local Cuisine
Goto Udon
Thin and strong elastic noodles.
Goto Udon is one of the three major udon noodles in Japan. One of its major features is that it has a strong elasticity despite being thin. Also, by applying camellia oil, a specialty product of Goto, it brings out the depth of flavor of wheat, resulting in delicious Goto Udon. There are endless variations, such as making it like soup pasta instead of just plain noodles.
Tsushima Nishi Anago
The highest quality anago with good fat content.
Refers to anago (conger eel) harvested in a limited area off the west coast of Tsushima City, Nagasaki Prefecture. Tsushima Nishi Anago has good fat content and soft bones, and is a branded anago that is praised by many as "the most delicious anago I've ever had!" There are many restaurants where you can enjoy it as kabayaki (grilled eel), nigiri sushi, hitsumabushi (eel rice bowl), and more.
Hikitoshi
A hospitality dish stewed with chicken and vegetables.
In the past, when guests visited during the Bon Festival, New Year's Day, or festivals in Iki, they would slaughter the chickens they raised at home and make a hot pot dish to entertain them. The origin of the current "Hikitoshi" comes from the practice of entertaining guests by leading them to the back parlor. The classic ingredient, Ichi no Shu tofu, has a unique flavor and sweetness that can only be tasted here, as it is a specialty product of Iki.
