Sanma Sushi

"Sanma Sushi" is a type of pressed sushi made by placing salted sanma (Pacific saury) with the head still attached on top of vinegar rice and pressing it. It seems that many customers enjoy comparing the different parts and flavors of sanma sushi used by each shop. It's also a great souvenir size with just one bite!
