Utsuho cuisine

Utsuho is a sea creature that can be found in the seas throughout Japan, but due to its many bones and difficult preparation, it has become a local cuisine in Kochi. The soft body has a light texture similar to chicken, while the gelatinous substance under the skin has a rich flavor, making it a luxurious taste. It can be enjoyed as sashimi or fried chicken.
