In the past, when guests visited during the Bon Festival, New Year's Day, or festivals in Iki, they would slaughter the chickens they raised at home and make a hot pot dish to entertain them. The origin of the current "Hikitoshi" comes from the practice of entertaining guests by leading them to the back parlor. The classic ingredient, Ichi no Shu tofu, has a unique flavor and sweetness that can only be tasted here, as it is a specialty product of Iki.
